The challenge

Baking naturally leavened panettone is widely considered the "Everest of bread-making." Unlike standard bread, you are forcing a delicate wild culture to lift a massive, heavy dough packed with sugar and fat without any commercial yeast to help.

The system constraints

Panettone requires a precise biological balance. The yeast gives it a light-as-air rise, while the lactic acid bacteria give it flavor and texture. If the environment slips out of balance, the dough either stalls completely or becomes too tight to incorporate the butter.

The method

Because these organisms require entirely different temperatures, oxygen levels, and moisture to thrive, I ran months-long experiments tracking different starter maintenance routines, isolating variables one by one until I could hit a predictable, successful bake every time.

The scale

Once the process was reliable, I productized it. I launched a micro-bakery called Knead for Need via my own website, running small-batch bake sales across three consecutive Christmases and raising over $7,000 for charity in the process.
